Chocolate Chip Cookies

1 cup Crisco
1/2 cup sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
2 cups + 4 T flour
1 tsp soda
1 tsp salt
chocolate chips

Drop by teaspoonfuls onto cookie sheet.  Bake at 375 degrees for 10 minutes.

Pineapple Upside Down Cake

1/2 cup Crisco
1 cup sugar
2 egg yolks
1/2 tsp vanilla
1 1/2 cup flour
1/8 tsp salt
1 tsp baking powder
1/4 tsp soda
2 beaten egg whites
1/2 cup pineapple syrup
1/4 cup hot water
1 can pineapple
1 bottle cherries

Cream Crisco and sugar.  Add yolks and vanilla.  Beat well.  Add sifted dry ingredients with juice and water.  Fold in egg whites.  Melt in skillet 1/2 cup butter.  Ad 1 cup brown sugar and cool.  Add pineapple and cherries in skillet.  Pour cake batter over it and bake at 350 degrees for 45 minutes.

Chinese Hardtack

“This is a Jessie Godfrey recipe for Christmas goodies.”

1 cup chopped dates
1 cup chopped nuts
1 cup sugar
1 cup flour
1 1/2 tsp baking powder
2 eggs
salt to taste

Sift flour, baking powder, sugar.  Add dates and nuts.  Add well-beaten eggs a little at a time.  Pat into 9 x 13″ pan and bake at 350 degrees for 15 minutes.  Cut while hot and roll in powdered sugar.

Note:  The dough when baked is extremely hot.
