1 1/2 lb hamburger
1 1/ cup bread crumbs
2 T chopped onions
1/4 tsp mustard
1 1/2 tsp salt
1/8 tsp pepper
1 egg
1/2 cup milk

Combine above ingredients, shape into balls. Brown in 2 T fat.

1- 13 1/2 oz. pineapple chunks drained (save juice)

pineapple juice
1/4 cup brown sugar
1/2 tsp ginger
1/4 cup vinegar
1 T soy sauce

combine ingredients, cook until thick and add sauce to meatballs; cook 5 minutes. Then add the following and heat through:

1 tomato, cut into chunks
1 green pepper, cut in strips

Beef Roll-Up Rolladen

1 lb round steak, cut 1/4″ thick
1/2 to 1 lb sliced bacon
1 large onion, sliced thin
1/2 tsp salt
1/4 tsp pepper
yellow or brown mustard
Lipton dry onion soup mix
1 can cream of mushroom soup
Cut steak into 4 equal portions and pound to tenderize. Add salt and pepper to each portion. Spread each portion with mustard. Place 3 slices of bacon on each, then onion. Roll each one up and put a toothpick in it to keep it rolled. Brown (sear) each one in hot butter. Add one cup cold water (enough to cover) and the soup mix. Cover. Lower heat and simmer 1 1/2 hours, checking the water level often. Remove meat and add 1 can mushroom soup and flour. Boil again. Place roll-ups in gravy and serve with potatoes or noodles.

Porcupines in a Cabbage Patch

Makes 8 servings

4 quarts cabbage, chopped
1/4 cup water
1/2 pound ground sausage
1 cup rice, cooked
1 tsp salt
1/2 cup onion, chopped fine
1/2 tsp pepper
1 1/2 lb hamburger
8 oz canned tomato sauce
1/4 cup brown sugar
1/4 cup lemon juice

Place cabbage in large covered baking pan with water. Put into 350 degree oven. Mix together sausage, rice, salt, onion, pepper and hamburger. For into 3″ long rolls. Remove cabbage out of oven and place rolls on top. Return to oven. Combine tomato sauce, brown sugar and lemon juice together and bring to a boil. Pour over meat on cabbage and return to oven for 1 hour. Remove lid last 15 minutes.
