Zucchini Bread

2002 Cowley Cookbook

2 cups sugar
1 cup oil
1 tsp salt
3 cups flour
2 cups grated zucchini (uncooked)
3 eggs
1 1/2 tsp cinnamon
1 tsp vanilla
1 tsp soda
1/4 tsp baking powder
1/2 cup nuts (optional)

Bake at 375 degrees for 60-75 minutes.
