2002 Cowley Cookbook

Any kind of tender met cut into slices (I have the met department cut a tender roast into thin slices)
2 eggs
fresh or dried parsley
1/2 tsp garlic pepper
1 tsp cumin
1/2 tsp white pepper
salt to taste
bread crumbs
tomato sauce
mozzarella cheese (or your cheese of choice)

Beat together eggs and seasonings.  Add meat and marinate for approximately 10 minutes.   Coat each piece in bread crumbs, deep fry and drain on paper towels.   Put meat on a cookie sheet and top with tomato sauce and cheese. Bake at 350 degrees until cheese is melted.

Note:  I like doing a lot of meat at one time and when at the bread crumb stage, freeze it and then use.
