Oriental Meatballs

From Homemaking Meeting, April 19792002 Cowley Cookbook 1 1/2 lb hamburger1 1/ cup bread crumbs2 T chopped onions1/4 tsp mustard1 1/2 tsp salt1/8 tsp pepper1 egg1/2 cup milk Combine above ingredients, shape into balls. Brown in 2 T fat. 1- 13 1/2 oz. pineapple chunks

Green Chili Enchilada

6-8 corn tortillas
grated cheese for topping

Mix together:
2 cans mushroom soup (rinse can with 2/3 can milk)
1 can diced green chilies
1/2 cup chopped onions
1 lb boned chicken or two chicken breasts (can used canned chicken also)

Break half of the tortillas in a baking dish, cover with 1/2 mixture of the other ingredients. Break rest of tortillas, then cover with remaining ingredients. Top with grated cheese. Bake at 350 degrees for 30-40 minutes.  Serves 8.

Family Favorite Meat Loaf

Makes 8 servings

2 eggs, beaten
3/4 cup milk
2/3 cup dry bread crumbs, crushed
2 T grated onion
1 tsp salt
1/2 lb ground hamburger
1/2 tsp sage
1/2 cup catsup
4 T brown sugar
2 tsp mustard
1/2 tsp ground nutmeg

Combine eggs with milk, bread crumbs, onion, salt, sage and meat. Mix and shape into loaf and place in loaf pan. Combine sauce and pour over loaf. Cover and cook 1 hour at 400 degrees.

Celebrity Chicken

1 package Lipton onion soup mix
1/4 cup grown sugar
1/2 cup ketchup
1/4 cup water

Mix ingredients together.  Line cookie sheet with foil; lay 6-8 chicken breasts on foil and top with mixture. Cook at 350 degrees for 1 hour  or 325 degrees for 2 hours or 275 degrees for 3 hours.
