Quick Choco-Oatmeal Cookies

“This is an unbaked cookie that our kids have nicknamed ‘Barfies’.”

4 cups sugar
1 cup milk
3 T cocoa
3 1/2 cups oatmeal
1 cup peanut butter
1 tsp vanilla

Mix together sugar, milk and cocoa and boil for one minute.  Remove from flame and add remaining ingredients.  Stir until thoroughly mixed and until peanut butter is melted.  Pour into a buttered 9 x 13″ cake pan and place in refrigerator.

Chewy Brownies

Date Nut Ritz

1 cup chopped dates
1 cup chopped nuts
1 cup Eagle Brand

Boil 5 minutes, stirring constantly.  Spread on unsalted side of Ritz crackers.  Bake at 350 degrees for 4 minutes.  Frost with powdered sugar frosting.

Refrigerate 4 hours before serving

4-Layer Dessert

“She calls it ‘4-layer dessert.’  I call it by a more appropriate name:  ‘Chocolate Lust’.”

Layer One:

1 stick butter
1 cup flour
1/4 cup powdered sugar
1/2 cup pecans

Mix  and pat in 9×13″ pan.  Bake for 15 minutes.  Cool.

Layer Two:

8 oz package cream cheese, softened
1 cup powdered sugar
1 cup Cool Whip

Mix and spread on first layer.

Layer Three:

2 packages chocolate instant pudding (small packages)
3 cups milk
1 tsp vanilla

Mix until thick.  Spread over second layer.  Chill.

Layer Four:

Top with Cool Whip or whipped cream.  Chill.
