Chicken Paprika

3 lb chicken, cut up
3 T butter
1 cup chopped onion
2 tsp paprika
2 chicken bouillon cubes
1 tsp salt
1 cup sour cream
flour

Melt butter in large pan.  Add onions, saute until browned.  Add paprika, bouillon dissolved in water; salt.  Bring to boil, add chicken.  Cover, cook over low heat about 1 hour.  Remove chicken.  Stir flour into sauce.  Stir until thickened and smooth.  Stir in sour cream and cook about 5 minutes.  Do not boil.  Return chicken to sauce.  Serve and enjoy.

Salmon Biscuit Roll

1/2 cup chopped celery
1/4 cup chopped onion
2 T butter
1/2 cup chopped ripe olives
1 lb red salmon
1 can cream of chicken soup

Saute celery and onion in butter until tender.  Add olives.  Drain salmon; reserve liquid for sauce.  Add salmon and 1/4 cup chicken soup to vegetables; set aside.

2 cups Bisquick
2/3 cup milk

Combine biscuit mix and milk.  Knead 12 times.  Roll into 9 x 12″ rectangle; set aside trimmings.  Cover dough with salmon mixture; roll up as for jelly roll.  Place on baking sheet, seam side down.  Combine egg and water–glass the roll with mixture.  Decorate with reserved trimmings; glaze again, then bake 25 minutes at 400 degrees until golden brown.

Milk
1 T lemon juice

Make sauce.  Add enough milk to reserved salmon liquid to make 1/2 cup.  Combine with remaining chicken soup and lemon juice in a small sauce pan.  Heat to boiling.  Cut salmon roll into servings.  Spoon sauce over each.

Swiss Spaghetti

“This recipe came from a 100% Swiss girl–they really do love Swiss cheese over there, and put it in all kinds of dishes.”

1 lb bacon, cut in 1″ pieces
1 chopped onion
1 minced garlic clove
1 1/2 to 2 cups hot water
1 1/2 to 2 T chicken soup base
1 1/2 to 2 T beef soup base
2 T sugar

Using a large heavy skillet, brown bacon pieces.  When bacon is almost cooked, drain most of the grease off bacon, leaving 1-2 T with the bacon.  Add the onion and garlic and saute until tender (don’t brown bacon).  Add tomato paste and hot water to bacon.  Add seasoning and simmer 5-10 minutes on low.  (Sauce should be slightly salty.)  Add 6 oz. grated Swiss cheese, then 8-10 oz. cooked spaghetti.  (Cook spaghetti while making sauce.)  Stir to cat, and add another 6 oz. grated Swiss cheese.  Stir again over very low heat until cheese is melted.  Do not overheat.

Mexican Casserole
