Macaroni & Cheese Souffle

Spanish Meatballs

Contributor:  Mae RobbCC Original 1 lb ground pork1 lb ground beef1 lb ground veal1 tsp salt1 can tomatoes1 onion1 T flour1/4 tsp pepper Mix meat and seasoning, forming into small balls which are dropped into 1 quart boiling water.  Add the tomatoes and whole onion.

“I used to make this when my kids were at home.  They didn’t like eggs and cottage cheese in lasagna, they loved this.”

2 large onions
2 cloves garlic
parsley
1 large can milk
1/2 cup whole milk
tall can parmesan cheese
1 can tomato paste
1 large can tomatoes
4 bay leaves
1 pkg Lowry spaghetti sauce mix

Meat Sauce:

Cook onion (chopped) and chopped garlic.  Set aside.  Brown meat, then add tomatoes, paste, Lawry sauce, bay leaf, salt and pepper, and the onion and garlic.  Simmer for 30 minutes.

Cook noodles for 20 minutes.

Cheese sauce:

Mix 4 T butter and 3 T flour in pan.  Add milk, canned milk and cheese.  Cook until thick.  Arrange in alternate layers the noodles, meat and cheese sauce in casserole, then bake for 20 minutes at 350 degrees.  Let stand 15 minutes before serving.

Parmesan Oatmeal Chicken

Sweet & Sour Meatlof

“Serve with baked potatoes, green beans, red jello, tossed salad and hot buttered rolls for a colorful and delicious meal.”

15 oz tomato sauce
1/2 cup brown sugar
1/2 cup vinegar
1 tsp prepared mustard
2 lb ground beef
2 eggs
1/2 cup chopped onions
1/2 cup fine bread crumbs
1 tsp salt
1/4 tsp pepper

Mix together tomato sauce, sugar, vinegar and mustard.  Mix together remaining ingredients and one cup of sauce mix.  Pack into loaf pan.  Pour 1/4 cup sauce over top.  Remaining sauce may be heated and used when serving cooked meatloaf.  Bake at 325 degrees for 1 hour or until done.

Mother’s Chicken Stuffing Casserole

Pancakes or Waffles

2 cups flour
4 tsp baking powder
3 eggs, separated
7 T melted shortening
1/2 tsp salt
2 tsp sugar
2 cups milk

Mix flour, sugar, salt and baking powder.  Beat egg yolks until lemon colored.  Add milk and melted shortening.  Pour slowly into dry ingredients and beat until smooth.  Fold in beaten egg whites.  Bake in waffle iron or fry for hotcakes.
