2002 Cowley Cookbook

1 1/2 – 2 lb. stew meat, cut into 1-inch pieces
8 carrots, cut in slices
6 medium potatoes, cut up
4 stalks of celery, cut up
1 T sugar
1 1/2 T salt
1/2 tsp pepper
1 can tomato soup
1 can cream of mushroom soup
2 cans water
2 medium onions, chopped

Put in 4-quart casserole dish or roaster. Cover and bake at 300 degrees for 3 1/2 to 4 hours.

1/4 tsp salt
2 eggs
3 T cocoa
1/2 cup chocolate chips

Mix everything together in a bowl except flour.  Cream well.  Add flour.  Put in greased square pan.  Bake for 25-30 minutes at 350 degrees (or you can make cookies.)

Cream margarine and sugar.  Add other ingredients.  Beat well.  Bake at 350 degrees 35-40 minutes.  Frost with chocolate frosting when cool.

Chocolate Frosting:

1 cup melted margarine
1/3 cup milk
1 1/2 T cocoa
2 tsp vanilla
2 1/2 cups powdered sugar

Mix together until light and fluffy.

2 tsp cinnamon
1 tsp ginger
1 tsp allspice
1 cup chopped nuts.

Mix until blended–do not overbeat.  Bake 40 minutes at 350 degrees.  When cool frost with white frosting:

White Frosting:

Mix until light and fluffy:

4 T butter

Frost cake.  Sprinkle with chopped nuts.

1 T yeast in 1/2 cup warm water
4 cups flour
1/2 tsp salt
3 T sugar
1 cup scalded milk
1 beaten egg

Soften yeast, cool milk in one big pan.  Add egg, milk, yeast, salt, sugar and flour.  Mix together well.  Let rise 1 hour.  Roll dough out on floured board and spread with softened butter.  Cut with glass and fold each circle in half.  Put on greased cookie sheet, each touching.  Let rise for 1 hour.  Bake 15-20 minutes at 400 degrees.

3 1/2 cups whole wheat flour

Mix everything in large pan; let rise 1 hour.  Punch down then shape into buns on greased cookie sheets.  Let rise until double.  Bake at 350 degrees for 25-30 minutes.

“Serve with baked potatoes, green beans, red jello, tossed salad and hot buttered rolls for a colorful and delicious meal.”

15 oz tomato sauce
1/2 cup brown sugar
1/2 cup vinegar
1 tsp prepared mustard
2 lb ground beef
2 eggs
1/2 cup chopped onions
1/2 cup fine bread crumbs
1 tsp salt
1/4 tsp pepper

Mix together tomato sauce, sugar, vinegar and mustard.  Mix together remaining ingredients and one cup of sauce mix.  Pack into loaf pan.  Pour 1/4 cup sauce over top.  Remaining sauce may be heated and used when serving cooked meatloaf.  Bake at 325 degrees for 1 hour or until done.

2 lbs beef cubes
2 T fat
1 envelope brown gravy
3 cups water
small cubed onion
3 T vinegar
3 T brown sugar
3/4 tsp salt
1/2 tsp pepper
3/4 tsp ginger
1 1/2 tsp Worcestershire
1 bay leaf
5 potatoes
6 carrots

Cut meat into 1″ cubes and brown in fat in deep pan.  Remove meat, add gravy mix and water.  Bring to boil, stirring constantly.  Add onion, vinegar, sugar, salt, pepper, ginger, Worcestershire, and bay leaf.  Return meat to pan, cover and simmer 45 minutes.  Cut potatoes in half and add remaining carrots.  Turn to high heat for 10 minutes.  Then turn to low and cook slowly for about 1 hour.

“Serve with roast beef and gravy.”

Preheat oven to 425 degrees.  Heat 2 tablespoons shortening in baking pan until really hot (hottest without burning!)

Beat together until smooth:

2 eggs
3 cups milk
2 cups flour
salt and pepper

Add above mix to hot grease and cook in oven for 45 minutes or until fluffy and brown.   (Keep oven door closed so Yorkshire won’t fall!!!)
