2002 Cowley Cookbook

2 cups flour
2 T sugar
4 tsp baking powder
1/2 tsp salt
1/2 tsp cream of tartar
1/3 cup oil
2 egg whites, beaten until frothy
2/3 cup skim milk

Mix dry ingredients. add everything else. Put cooking spray on board, shape in a circle, patting until dough is about 1/2″ thick. Use a washed cooking spray lid to cut out dough. Put in a pan that has been sprayed with cooking spray. Bake at 350 degrees until lightly browned.

6 egg whites
2 cups skim milk with 4 T vinegar
2/3 cup fat free sour cream
1/3 cup oil
1 tsp vanilla

In bowl, put dry ingredients and whisk together. Beat egg whites until frothy. Add egg whites and everything else. Mix together thoroughly. Cook.

2002 Cowley Cookbook

Scrub potatoes thoroughly. slice each potato 1/8″ – 1/4″ thick.  Put on pan that has cooking spray on it, single layer only. Spray the potatoes, then season to taste with salt, seasoning salt, etc.

Bake until they are almost a little crispy.  Eat like a french fry.

Brown 2 pounds hamburger and chopped onion. Season with taco seasoning.  Put hamburger and one package of crushed tortilla chips.  Add 1 can (#10) chili beans. Put small jar of salsa in.  Add 1 can enchilada sauce and one can each of cream of mushroom and cream of chicken soups. Grate two cups or so of cheese; stir all this in large bowl.

Put in crock pot or bake in oven.

Chop 1/2 lb pecans.  Spread pecans and chocolate chips in pan.  Pour toffee over this.  On top place a giant Hershey bar on hot mixture and spread with a knife as it melts.

“Great for big family get-togethers or Sunday dinners.”

Bring to boil:
1 cup water
1/2 cup shortening
1/2 cup margarine
4 T cocoa

Add:
2 cups sugar
2 cups flour
2 eggs
1 tsp soda
1/2 tsp salt
1/2 cup milk
1 tsp vanilla

Bake in greased and floured large cookie sheet pan at 375 degrees for 20 minutes.

Glaze:  (while warm if desired)

Melt one stick margarine and add:
4 T cocoa
6 T milk
1 tsp vanilla
1 cup nuts (optional)
1 lb powdered sugar

“Josephine brought these yummy bars to a 4th of July cookout and they were gone in minutes.”

Melt in microsave:

32 caramels
3 T butter
3 T milk

Mix separately:
1 cup oatmeal
1 cup flour
1/2 tsp salt
3/4 cup brown sugar

Pat 3/4 crumb mixture in 9×13″ pan.  Bake 5 minutes at 325 degrees.  Spread caramel mixture over crust.  Sprinkle with chocolate chips (and nuts, if desired).  Add remaining crumb mixture to top.  Bake 15 more minutes at 325 degrees.  DO NOT OVER BAKE!
